VINIFICATION
One night maceration on the skins at 10°- 12°C a with subsequent crushing and cold clarification. The racking takes place after 24 hours, and the fermentatin at a controlled temperature (18° - 20° C) follows.

WINE CHARACTERISTICS
The color of the wine is straw yellow, with a typical aroma which recalls exotic fruits and spices (cloves and cinnamon), mixed with a distinctive flavor of boiled chestnuts with a slight tinge of laurel. It's great to be enjoyed as an aperitif. It matches nicely with soups and risotto, but it goes perfectly with fish and cured meats (salami, bacon, ham, ...) as well.
